  • 1 can black beans, drained and rinsed Chickpeas can be a substitute
  • 1 cup corn Grilled or canned (drained well)
  • 1 unit jalapeno, finely minced Omit or replace with bell pepper for less spice
  • 1 bunch fresh cilantro Optional

Method
 

Preparation Steps
  1. In a medium bowl, whisk together mayonnaise, sour cream, fresh lime juice, and taco seasoning until smooth and combined.
  2. In a large mixing bowl, add tri-color coleslaw mix, red bell pepper, grape tomatoes, black beans, corn, and jalapeno, and toss gently.
  3. Fold the creamy dressing into the vegetable mixture until evenly coated.
  4. Season with kosher salt and black pepper to taste, then stir gently.
  5. Cover and refrigerate for at least 30 minutes.
  6. Before serving, give a quick stir and serve alongside grilled meats or tacos.
