- If using fresh corn, shuck the kernels and grill them for about 10 minutes over medium-high heat until they are beautifully charred. If using frozen corn, sauté it in a skillet on medium-high for 3-4 minutes until it achieves a golden color. Set aside to cool slightly.
- In a small bowl, combine mayonnaise, sour cream, minced garlic, lime zest and juice, chili powder, and cayenne pepper. Whisk until smooth and creamy.
- In a large mixing bowl, add charred corn, cooked small pasta, sliced green onions, diced jalapeño, chopped cilantro, and crumbled cotija cheese. Gently toss to combine.
- Pour the creamy dressing over the salad ingredients and toss until fully coated. If adding crispy bacon, fold it in now.
- Enjoy immediately or refrigerate for about 30 minutes before serving to allow flavors to meld.
