Prepare the Syrup
- In a medium saucepan, combine chopped fresh rhubarb and grated ginger with 2 cups of water. Bring to a boil over medium heat, then simmer for 15 minutes until softened.
- Strain the mixture through a fine mesh sieve into a bowl, discarding the solids. Let it cool.
- In a cocktail shaker, mix the cooled rhubarb-ginger syrup with 1/4 cup of honey until well combined.
- Fill glasses with ice cubes. Pour syrup over the ice, then top with sparkling water.
- Gently stir to combine the syrup and sparkling water.
