Method
 

Prepare the Syrup
  1. In a medium saucepan, combine chopped fresh rhubarb and grated ginger with 2 cups of water. Bring to a boil over medium heat, then simmer for 15 minutes until softened.
  2. Strain the mixture through a fine mesh sieve into a bowl, discarding the solids. Let it cool.
  3. In a cocktail shaker, mix the cooled rhubarb-ginger syrup with 1/4 cup of honey until well combined.
  4. Fill glasses with ice cubes. Pour syrup over the ice, then top with sparkling water.
  5. Gently stir to combine the syrup and sparkling water.
  6. Garnish with lime peel or lemon balm and serve immediately.
