Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into 1/4-inch thick pieces, brush both sides with olive oil, and sprinkle with salt and pepper.
  3. In a greased 8x8-inch baking dish, layer half of the zucchini, half of the ricotta, half of the marinara, and top with half of the mozzarella. Repeat the layers.
  4. Sprinkle dried oregano over the top layer and add extra salt and pepper if desired.
  5. Bake for 20–25 minutes until the cheese is bubbly and golden, and zucchini is tender.
  6. Let it rest for 5 minutes and garnish with fresh basil before serving.
