- Slice the zucchini lengthwise into 1/4-inch thick pieces, brush both sides with olive oil, and sprinkle with salt and pepper.
- In a greased 8x8-inch baking dish, layer half of the zucchini, half of the ricotta, half of the marinara, and top with half of the mozzarella. Repeat the layers.
- Sprinkle dried oregano over the top layer and add extra salt and pepper if desired.
