For the Grilling
  • 1 large yellow bell pepper Can use other colors for variety
  • 2 tablespoons olive oil For peppers
  • 1 teaspoon kosher salt Essential for seasoning
For the Garnish
  • 2-4 tablespoons fresh cilantro Optional garnish
  • 1/2 cup diced mango Can use frozen if fresh isn't available
  • 1/3 cup pineapple tidbits Substitute with fresh if desired

Method
 

Marinating and Grilling
  1. In a large ziplock bag, combine chicken breasts, salsa, lime juice, olive oil, and pepper. Seal and mix well. Refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high heat (400°F). Lightly oil the grill grates.
  3. Slice the yellow bell pepper into strips. Toss with olive oil and salt in a bowl, then prepare for grilling.
  4. Place marinated chicken on the grill, and add the peppers in a grill basket. Grill chicken for about 4-5 minutes per side or until cooked through.
  5. Transfer grilled chicken to a platter, and top with salsa, diced mango, and pineapple tidbits. Garnish with cilantro if desired.
